A perfectly sweet vegan poppy seed dressing delicately balanced with a hint of tartness. A summer salad staple dressing.

Not going to lie to you friends. This homemade vegan poppy seed dressing has been on repeat every day this week. Sometimes twice a day.
I can't seem to get enough of this sweet dressing and how well it goes with some of the best flavors of summer! I am not vegan, so I have been pairing my dressing with a Strawberry Bleu Cheese Salad. But it can go with so many fruits and greens!
I love that this poppy seed dressing is dairy free, and has very minimal no fuss ingredients. I don't have time to be chopping, squeezing or prepping anything in the middle of the day most days.
And what if you need a quick lunch to prep for the next day? Well then this poppy seed dressing has got your back.
Before we jump let's have a discussion. Is it "poppyseed" or "poppy seed" because quite frankly I couldn't decide, and google didn't help.
Panera calls their dressing "poppyseed", so I almost went with it. But it felt wrong friends. What do you think it should be?
And also, do you know how worried I was I was going to type poopy seed...because let's be honest, that probably isn't appetizing to most. Me? I was an endoscopy nurse for years, poop seeds phases me zero.
On we go friends.
Ingredients
You only need 5 ingredients and you don't have to do any dicing or chopping of any kind! A lot of poppy seed dressings use lemon.
I really love how different this dressing using vinegar! Plus you don't have to worry about having a fresh lemon on hand!
- Light tasting olive oil
- white wine vinegar
- poppy seeds
- dijon mustard
- maple syrup
- salt
Expert tips and Substitutions
Tip 1: You can use a hand whisk to make this dressing, or simply use a jar with a tight fitting lid and shake, shake, shake baby!
Tip 2: Be sure to use a light tasting olive oil! Unless you super duper love the taste of extra virgin olive oil. I find that EVOO is way to strong of a taste and ruins the taste of dressings.
If you decide to sub out the oil I would recommend avocado oil, as it is pretty flavorless and tastes great in dressings.
Tip 3: Store any unused dressing in the fridge. It may solidify a tad once being in the fridge. Leaving it out on the counter a few minutes before you need it will make all things right again.
So what is it we gotta do to get this dressing on your salad stat?
First you are going to need a jar or bowl big enough to hold the ingredients. This dressing doubles or triples easily so just decide how much you want to make and hit the 1x,2x,3x button on the recipe card.
Then you just add all of the ingredients to the jar and whisk to combine!
Easy peasy lemon squeezy friends!
The dressing will separate (see pic below compared to other two pics) because it is homemade and that is completely normal! It is because it has no nasty ingredients that keep it from separating like store bought dressings.
Just give the dressing a good shake or whisk right before you use it!

Description
A perfectly sweet vegan poppy seed dressing delicately balanced with a hint of tartness. A summer salad staple dressing.
Ingredients
- ½ cup of light tasting olive oil
- ¼ cup of white wine vinegar
- 1 teaspoon of poppy seeds
- 1 teaspoon of dijon mustard
- 1 tablespoon of pure maple syrup
- ⅛ tsp of salt
Instructions
- Add- measure and add all of your ingredients into a glass jar.
- Whisk- whisk briskly to combine all of your ingredients. You can also use a tight fitting lid and vigorously shake until combined.
- Pour- pour over your salad and enjoy!
Notes
- It is natural for separation to occur. Just shake or whisk to recombine before serving.
- It is also common for it to solidify a tad in the refrigerator if you have unused dressing. Just leave it on the counter a few minutes before it is needed.
- Be sure to use light tasting olive oil versus extra virgin olive oil, which has too strong of a taste.
