    Better than Magic Bars (Gluten Free/Vegan)

    These better than magic bars are your favorite layered magic bars with a few upgrades. They are gluten free and taste just like a Snickers bar. Gooey, chocolatey, peanuty and full a rich caramel like filling.

    I know you know that magic bars are delicious or you wouldn't be looking up a recipe to make them.

    But what you don't know, is that the upgrades I made to these gluten free magic bars make them better than magic. They make them like a Snickers.

    And I am all about having homemade bars that taste just like Snickers.

    So I am telling you now, if you don't like Snickers, this recipe isn't for you.

    Because the chocolate cookie crumb base, combined with the crispy yet melted chocolate chips, and the thick gooey, chewy coconut condensed milk all combined with roasted peanuts, make them unbelievably candy bar like.

    Oh and bonus! These are also dairy free, and if you use the right cookie base they can be vegan too. I made these a gluten free, vegan magic bar as written, but you can substitute ingredients that work for you best.

    Ingredients and Substitutions

    Don't for get to check out the subs for suggestions on what you can use to make this recipe work best for you! Here is what you are going to need for this recipe:

    • vegan butter - I like Miyokos because it is very clean and not made with soy etc.
    • chocolate cookies - I used these GF/Vegan double chocolate cookies
    • flaked coconut
    • chocolate chips
    • roasted peanuts
    • condensed coconut milk

    Substitutions

    Vegan butter- you can sub the butter for any kind of butter your heart desires. Just keep the amount the same.

    Chocolate cookies- this recipe will work with any type of chocolate crispy cookie or graham cracker you would like to use.

    Chocolate chips- I used an allergy friendly chocolate chip that is vegan.

    Peanuts- feel free to sub in any nut you would like. If you love the idea of tasting like a Snickers, I would leave peanuts.

    Condensed coconut milk- I have not tested this recipe with anything other than this brand of sweetened condensed coconut milk. While I am fairly confident any brand will work, I do not know what something other than coconut based will do when baked.

    Expert tips

    • The first thing you need to know about these bars is that they are gooey. Gooey meaning messy, and I loved them that way. Because of this I think it is best to use parchment paper just to make things easier on you.
    • Take the time to spread the ingredients out evenly.
    • The condensed coconut milk can be hard to spread. First be sure to stir it after opening. It can settle some. Second, you can always use a the back of a spoon to help spread it or even wet the spoon some so it sticks less.

    How to store

    These bars are best stored and kept in the fridge until you are ready to eat. After baking you will cool the bars in the fridge before slicing. Once solidified back together they will be safe to cut.

    Stick them in an airtight container and then back in the refrigerator for up to 3-4 days.

    Description

    6 layers of gluten free vegan ingredients that turn the ordinary magic bar into extraordinary. These Better than Magic Bars taste just like a Snickers. 


    Ingredients

    Scale
    • 4 ounces of vegan butter (salted or unsalted works)
    • 1 cup of  vegan chocolate cookie crumbs (see notes)
    • 1 cup of flaked coconut
    • 1 cup of vegan chocolate chips
    • 1 cup of dry roasted peanuts (see notes)
    • 1 can (10 ounces) of sweetened condensed coconut milk

    Instructions

    1. Preheat oven to 350°F. Prepare an 8x8 baking dish by lining with parchment paper.
    2. Melt butter and pour into prepared baking dish.
    3. Sprinkle evenly in the following order on top of the butter- chocolate cookie crumbs, coconut, chocolate chips, peanuts. 
    4. Pour the sweetened condensed milk evenly over the top, and spread evenly. 
    5. Bake for 30 minutes. Remove from oven and let cool for 15-20 minutes at room temperature and then place in the fridge to cool the remainder of the way. 
    6. These bars can be cut after they have cooled and hardened. Keep these in an airtight container in the fridge up to 5 days. Enjoy. 

    Notes

    • I used Simple Mills Double Chocolate Cookies. This is a 5.5 ounce box of cookies. Place the cookies in a high powered blender or food processor and pulse until you have fine cookie crumbs with no chunks. The Simple Mills makes a little over 1 cup of crumbs store any leftover. 
    • The dry roasted peanuts should be the kind that only have peanuts and salt as ingredients
