Dreaming of evenings on the porch swing enjoying the summer breeze? Yeah me to.
I don't really have a porch swing, but I do like to be outside sipping a beverage as much as possible.
And in order to make sure my summer evenings are of the most epic proportions, I wanted have a summery drink that could be tasty when I don't feel like having the alcohol. So I created this mocktail aka cocktail without alcohol.
And its heaven.
A tall drink of peachy, lemony bubbly kick that is healthy and perfect for your porch swing.
This drink is reminiscent of southern inspired peach lemonade drinks but made so easy without you know, making actual homemade lemonade.

Ingredient notes and substitutions
The best part about this drink is you only need a handful of ingredients to make this non alcoholic drink.
- Peach Juice- I used an all natural peach juice that was sweetened with cane juice. It is made by Simply and the juice is GMO free and not from concentrate which makes it a very good choice of juice.
You can sub in peach nectar for juice if you would like.
- Club Soda- Club soda is water that has been carbonated. You can sub in sparkling mineral water for club soda. I do not recommend subbing in tonic water for the club soda. Tonic water has a distinct taste that will overpower the peach.

- Lemon Juice- Be sure to use the juice from a fresh lemon. The lemon juice in a container will not taste as good. Lemon is traditionally used in a Tom Collins cocktail but if you wanted to change things up I think fresh lime juice would be a nice twist.
Expert tips
- Lightly Sweetened- This drink is lightly sweetened by the peach juice. No simple syrup is added like a traditional Tom Collins. If you would like it to be sweeter I recommend 1 teaspoon of honey added in with the lemon juice and peach juice. Stir before adding the ice.
- Double or Triple- You can easily double or triple the serving for your needs by making that much at once versus a single serving.
- Make ahead- Prepare your Tom Collins mocktail ahead of time by preparing the peach and lemon juice. Do not add ice or club soda until ready to serve.

What glass does a Tom Collins Mocktail go in?
A Tom Collins traditionally goes in a tall highball glass. But the classic drink has gin, so I say you do you and serve it in whatever you feel like.
Can I make this with alcohol?
This is a mock Tom Collins which means there is no alcohol. That might not work for everyone you are serving, so if you want to add alcohol use Gin or vodka. Add it with the peach and lemon juice. I suggest 1 ounce of alcohol.
What foods go with with this peachy mocktail?
A strong pungent cheese board will pair well with these drinks and bring out that peach flavor. You can serve with light appetizers and cocktail nuts. For a main course, peach goes really well with pork.

Instructions
