A delicious one pan, protein packed, Whole30 and Paleo breakfast. This Sweet Potato, Bacon and Egg Breakfast Hash is perfect for any meal of the day.

If you are someone who has a hard time deciding between a sweet or savory breakfast this recipe is perfect for you because a) it has bacon which could go down in history for the best savory flavor ever and b) it has sweet potatoes which have sweet in the name, so duh.
And if you are someone who is borderline on liking sweet potatoes, I get you. I am not always down with the squishy sweet flavor of something that isn't dessert.
But I am always down for this breakfast hash. The crispy sweet potatoes just taste too damn good with the onion and the bacon not to love them.
I have been making this bacon, sweet potato and egg breakfast hash for quite some time now. That is if you consider, like 7 years quite some time. And with the exception of these meatballs, and sweet potato fries, this hash is pretty much the only way I eat sweet potatoes.
Fun fact. I actually call this dish Viking Hash. It feels cool and definitely makes it sound hardcore paleo. So you call it that too when you serve it to your family. You will feel cool too.
What is in the hash yo?
Well my friend just four ingredients. You are welcome.
- sweet potatoes
- bacon
- eggs
- white onion
So not only does the dish have only four ingredients (ok 5, if you count salt) but it is also made in one pan. And a one pan dish always means you get an easy meal.
The hardest part of this dish is chopping the stupid potatoes into uniform sized pieces.
My life is not cut out for exact measurements. It is just not my thing. But if you don't want to get pissed while cooking these potatoes you have to make them uniform. Otherwise curse words start to fly when some are done, some are raw, and some are burnt.
Don't say I didn't warn you.

Step by step instructions for Sweet Potato, Bacon and Egg Breakfast Hash
- Chop: Start with chopping your raw bacon. Chop the bacon into pieces about ½ inch wide. Next chop your potatoes into small even pieces. Then finely chop your onion.
- Heat a skillet, I used cast iron, to low medium heat and add your bacon. Cook the bacon slowly to render a lot of bacon grease. Let the bacon cook for 4 minutes (it won't be done) then add your sweet potatoes and onion. Turn the heat up to medium. Note: If your bacon did not render enough grease add ghee or coconut oil to help roast the potatoes. You could add up to 3 tablespoons more of a oil depending on how your potatoes are cooking.
- Cook: Continue to cook your potato, onion, bacon mix until the potatoes are softened and beginning to get a caramelized crispy crust. This took about 10 minutes for me.
- Add your eggs. Make 4 wells in the potato mix by scooting the ingredients around with a wooden spoon. Crack your egg directly into the well. Cover. Allow eggs to cook until the egg is set to your liking, 10 minutes will get an egg that is set in the center with a firm yellow yolk.
- Adjust: You may need to adjust your heat once you add your eggs so they do not over cook on the bottom. If you would, like you could always make the eggs in a separate pan and then top the hash.
Substitutions
Sweet potatoes- you could sub in a white sweet potato for the hash. Or even a regular potato but you won't get the awesome sweet and savory combo with a regular potato.
Onion- feel free to sub in the onion you love like yellow or vidalia. I have tried this with a red onion and it wasn't my fav.
Bacon- don't sub this out. It's bacon. Duh. But do be sure to get a Whole30 compliant bacon if you are on a Whole30
Eggs- you could always leave these out and eat the hash with another protein you are craving.
