This stove top creamy mashed banana oatmeal is a staple breakfast that is deliciously creamy, sweetened with honey and totally adaptable with toppings like walnuts and cinnamon.

I love these oats. And I should first admit that I don't really like oatmeal. But these creamy banana oats with crunchy walnuts is sweet and hearty and totally warming to my soul.
These oats are quick to get on the table, perfect for fueling you for hours and totally kid approved. Here are a few ways you can use these oats:
- I originally used this recipe for my toddler just omit the honey and the toppings.
- Replace your kids gross packet oatmeal with this
- As a super yummy meal prep
- For lunch or dinner when you don't feel like cooking
For extra creamy delicious oats I love to top this with cashew milk. This is my favorite cashew milk because there is only 2 ingredients, totally clean and full of good for you fats that will keep you fuller longer.

Ingredient notes and substitutions
- Rolled oats- You can sub in your favorite oats and they can be regular or gluten free. Just be sure to adjust cooking times if you use something like steel cut oats, which will require a longer cooking time or instant oats which will require a shorter cooking time.
- Banana- It is best to use a ripe to very ripe banana for the best sweetest flavor. If you use a banana that isn't ripe it will be hard to mash and have a bitter, raw very green flavor.
- Honey- Honey and banana just go together, but if you prefer a different sweetener feel free to sub in your favorite. You may need to adjust the measurement.
- Toppings- The toppings really make this oatmeal special. I love it with cashew milk because it is thick and creamy. I also love to add walnuts, but anything that sounds good will work. You could add peanut butter or chopped peanuts an honey! So yum.
Expert tips
Oats in the beginning: I know my directions for cooking the oats are different than the package. You can cook the oats either way, I just find it faster and creamier to let the oats come to a simmer with the water versus adding after.
Banana- There is no need to cook the banana but if you want to let it all simmer together you can, just let it cook for about a minute after you add the banana.

Can I make this in the microwave?
I didn't test this, but you could follow the directions for your oatmeal for the microwave for cooking the oats. The rest of the directions will remain the same for the recipe.
Is this gluten free?
Be sure to grab gluten free oats if you need that in your diet. We buy a big bag of sprouted gluten free oats from Costco, and it's an amazing deal.
Can I make this vegan?
You can make this vegan by omitting the honey and replacing with maple syrup.

Ingredients
- ½ cup of rolled oats (gluten free or regular)
- 1 cup of water
- 1 tablespoon of honey (less for less sweet) (maple syrup for vegan)
- 1 medium banana- ripe to very ripe (see notes)
- pinch of salt
- Toppings (optional)- favorite cream or milk, walnuts, cinnamon
Instructions

Mash banana in a small bowl with a fork.

In a medium saucepan, add water, oats and salt and bring to a boil over medium heat. Reduce heat and simmer or 2-3 minutes until oats are creamy and softened.

Add mashed banana and honey to oats and stir until well combined.

Place into bowl and serve topped with your toppings of choice. I top with 1 tablespoon of cashew milk, 1 tablespoon of crushed walnut pieces and sprinkle of cinnamon.
Notes
- A ripe banana is deep yellow and may have some brown speckles, the more ripe the banana the brown it has. The more ripe the more sweet it is. Do not use unripe banana for this recipe.
