Instant Pot Soup Sunday Number One
We are starting today off with a creamy tomatoey, little bit spicy, sausage instant pot soup. This instant pot creamy sausage and rotel soup screams winter comfort food. It is currently 28 degrees here in the Cincinnati area and I’m dreaming of this creamy sausage soup.
There is a lot to be said for a quick amazing soup you can have when it’s below freezing outside. This Keto friendly, low carb, and primal instant pot soup is ready in almost 30 minutes!
Technically, the soup is prepped and cooked in under 28 minutes! But you still have to add your cheeses so let’s say you can eat this soup in 33 minutes. Not too bad right? That is easy enough to do on a weekday night!
And thanks to the instant pot this creamy sausage soup is pretty much hands off while the instant pot does it’s thang! And boy does an instant pot do it’s thang so well.
I’ve never typed the word thang in my life. Just thought I would use it a couple times to see if I liked it. I don't. Thang will no longer be used on this blog. I promise.
Why you are going to love this soup
This soup was actually inspired by the ever famous sauage and rotel dip appetizer. The dip came across my pinterest feed one day and I thought, I love that dip, but never have a need to make it. So I decided to recreate the dip into a soup and friends if you love sausage and rotel dip, you are going to love this low carb creamy sausage and rotel soup.
how To Make this Instant Pot Creamy Sausage Rotel Soup
To make this soup you only need an instant pot. Score for the one pot meal with little clean up!
Set your instant pot to saute- when it reads 'hot' add your sausage and brown. Brown for about 6 minutes and when it looks like it has about 1 minute left to go, add your minced garlic to the sausage.
Once your sausage is browned turn the saute function off and add the rest of your broth, rotel, tomatoes and spices. I promise you can handle this recipe. Just brown, dump, turn on, stir, eat.
Turn the instant pot on manual for 3 minutes. After the soup has finished cooking, quick release by opening the steam valve all the way. Add your cream cheese and parmigiano reggiano cheese. Whisk until well combined. Then add your spinach. Feel free to serve with additional parmigiano reggiano cheese on top.
This creamy sausage and rotel soup is going to make you really happy. It is comfort in a bowl with it’s briny cheesy tomato broth and savory sausage filled with little touch of boldness from the rotel.

Instant Pot Creamy Sausage and Rotel Soup
- Total Time: 28 minutes
- Yield: 6 1x
Instant Pot Creamy Sausage and Rotel Soup. Delicious and fast. Perfect for a cozy winter night. Love sausage and rotel dip? You are going to love this twist into soup!
- 1.5 lbs bulk sausage (you can use any type of sausage you prefer)
- 2 cloves garlic- minced
- 14 oz can of diced tomatoes
- 10 oz can of Rotel
- 2 cups chicken broth
- to taste salt and pepper
- ⅛ tsp ground red pepper
- 4 oz cream cheese
- ½ cup shredded parmigiano reggiano cheese
- 2 cups spinach (stems removed)
- Turn instant pot on to "saute" function.
- Mince garlic while the instant pot is heating up. De-stem spinach.
- When the Instant Pot reads 'hot' add ground sausage and brown. Brown for about 6 minutes until you no longer see pink. Add minced garlic just before the sausage is done browning.
- Turn instant pot off.
- Add tomatoes, rotel, and ground red pepper . Stir.
- Close lid and set Instant Pot to manual- 3 minutes. When this is finished cooking quick release the pressure valve. (It took about 16 minutes for my pressure cooker to heat up)
- After the pressure has been released open lid and add cream cheese and parmigiano reggiano. Whisk until smooth. Add spinach last and stir again. Add salt and pepper to taste.
- Serve warm with additional parmigiano reggiano on top.
