It seems like if you want a sweet and spicy potato the only recipes out there are for sweet potatoes. And I don't know about you, but I like me a russet potato over a sweet potato any day.
Honestly, can you even go wrong with any potato as a side dish? Probably not.
I love making roasted potato slices for dinner. They can be super quick to make when you use the right method. Slicing thinly into rounds is super quick because they bake fast and crisp up nicely.
The final result with this recipe? Crispy roasted potatoes with a little sweet to your heat. Roasted in the oven so hands off and then topped with a yummy bold parmesan cheese that cuts thru some of the sweetness.
These hot honey potatoes are gluten free and paleo so they can really spice up a lot of dietary preferences.
Ingredients and Substitutions
- honey
- sriracha sauce (this is my favorite clean sriracha)
- russet potatoes
- olive oil
- parmigiana Reggiano cheese
- salt
Substitutions
With such few ingredients there really isn't much to sub in this recipe. And if you change them, well, it kind of defeats the purpose of the entire dish.
You could switch out the potato you use easily. I just prefer how sturdy and crunchy a russet potato gets.
Expert Tips
- Parchment paper is really gonna help you crisp up your potatoes. I highly recommend using this.
- Honey can have a distinct flavor, just be sure you are using a honey you enjoy the taste of.
- If you like it hot, add more sriracha, if you like it mild, add less. I liked the recipe with both one and two tablespoons, but you could adjust it however your taste buds prefer.
- Don't skimp on the oil. The oil is essentially "frying" your potatoes so they become delicious and crispy.
- Don't put the honey on until your potatoes are mostly crispy. The edges should be well on their way to crispy perfection by the time you put the honey mix on. Putting it on too soon may result in soggy potatoes.
How to serve and store
You will want to serve these warm and right out of the oven for the best taste and crispiness.
You can store any leftover in an airtight container in the fridge up to 3 days. To reheat they would be best heated in a skillet.

Roasted Crispy Hot Honey Potato Slices

Description
Crispy oven roasted potato slices with a hot honey glaze that is the perfect combination of kick with sweet. Topped with sharp parmigiana Reggiano cheese to balance it all out.
Ingredients
- 1 pound of russet potatoes, scrubbed and dried
- ⅓ cup of honey
- 1-2 tablespoons of sriracha sauce (depending on spice level you want)
- 3 tablespoons of light tasting olive oil, divided
- ½ teaspoon of salt
Instructions
- Preheat oven to 425°F and prepare a baking sheet with parchment paper. Brush half of the olive oil on the prepared baking sheet.
- In a small bowl, combine the honey and sriracha and mix well.
- Evenly slice the potatoes into rounds about 1/16" thick by hand or with a mandolin. Place the rounds on the baking sheet and brush the tops with the remaining olive oil. Sprinkle with salt. Place in the oven and bake for 20 minutes.
- Remove the rounds from the oven and evenly drizzle or brush the hot honey onto the potatoes and then sprinkle evenly with cheese. Bake for 5 more minutes or until the potatoes are crispy and hot honey is bubbly thick and cheese is melted.
- Serve warm and enjoy!

- 1 tablespoon of sriracha is mildly spicy and 2 tablespoons is moderately spiced.
