Description
Upgrade taco night with this one dish ground turkey sweet potato skillet! This delicious easy weeknight dinner is flavored with homemade taco seasoning and can be loaded up with your favorite taco toppings!
Ingredients

2 med large sweet potatoes, cleaned and shredded

1-1½ pounds of ground turkey

1/2 red pepper, diced

1/2 green pepper, diced
-
1/2 yellow onion, diced
-
1/2 cup green onion, green parts only, thinly sliced

1/2 roma tomato, chopped
-
3 tablespoons of olive oil, divided
-
2 tablespoons of tomato paste
-
1/3 cup water
Taco Seasoning:
-
3 teaspoons of chili powder
-
1 teaspoon of cumin
-
½ teaspoon of garlic powder
-
¼ teaspoon of onion powder
-
½ teaspoon of oregano
-
1 teaspoon of salt
optional toppings: avocado, salsa, sour cream, cheese, guacamole, fresh cilantro
Instructions

In a large skillet, heat 1 tablespoon olive oil over medium heat. Add turkey, a pinch of salt and brown. Stir and break apart as it cooks. When turkey is about 75 percent browned (about 4 minutes) add veggies and cook while stirring occasionally until veggies are tender crisp, about 3 minutes.

Add seasoning to meat and veggies, stir until evenly coated and remove from skillet with a slotted spoon. Set aside.

Add 2 tablespoon of olive oil to the skillet and then the shredded sweet potatoes. Cook the sweet potatoes, letting them brown before moving around when stirring. Cook until just tender, trying not to overcook. This takes about 6 minutes.

Add all ingredients back to skillet along with 2 tablespoons of tomato paste and water. Stir together to combine ingredients, and cook for 2-3 minutes until everything is heated back up.

Remove from heat, top with green onion and tomato. Add additional toppings if desired and serve warm.
