These fudgy gluten free rocky road brownies are a salty, sweet brownie recipe for when you are craving a chewy, crunchy salty sweet dessert. These fudgy brownies topped with roasted marshmallows, chocolate chips and roasted peanuts.

I perfected the gluten free fudgy chewy brownie a while back. It took only like 397474 tries to get it right.
But once you have a perfected brownie recipe you can go hog wild with flavors. Exhibit a) these rocky road brownies.
Gooey roasted marshmallows, with dry roasted peanuts, and chocolate chips. If those ingredients are enough to get you excited, you might need to get checked out.
These brownies disappeared fast. Like I had to hide some so I could get some later, fast.
What is rocky road flavor?
Rocky road is traditionally known in the US as an ice cream flavor. It is a chocolate ice cream base, with marshmallows and nuts.
If you do any type of recipe searching for rocky road you will find that the type of nut used varies. For this recipe we are sticking to a classic dry roasted peanut.
Ingredients and substitutions
Here are my favorite ingredients to use for this recipe:
- 1-1 gluten free flour ( I like to use this gluten free 1-1 flour)
- sugar
- unsweetened cocoa powder
- milk chocolate chips
- butter
- vanilla
- eggs
- salt
- marshmallows
- dry roasted peanuts (just salt and peanuts for the ingredients)
Substitutions
1-1 flour- As mentioned above I really like King Arthur for this recipe. It was only tested with this flour and gluten free flours can be tricky. I do not recommend subbing in a gluten free all purpose flour.
milk chocolate chips- you can use any type of chocolate chips you would like
Dry roasted peanuts- you can sub in any nuts you would like for this recipe, almonds are a very common nut found in rocky road recipes.
Expert tips
These gluten free rocky road brownies are fairly straight forward where there aren't a lot of expert tips needed.
I do always like to recommend using parchment paper. I think it just works best for gluten free baking.
How to store
These can be stored in an airtight container at room temperature for up to 3 days or in the fridge for up to 5 days if you want a chewier experience. The texture will definitely be different if you place the brownies in the fridge but still delicious.

These fudgy gluten free rocky road brownies are salty, sweet brownie recipe for when you are craving a chewy, crunchy salty sweet dessert.
Ingredients
Brownies
- ¾ cup of 1-1 gluten free flour ( I used King Arthur)
- 1 cup of sugar
- ¼ cup of unsweetened cocoa powder
- ½ cup of milk chocolate chips
- 1 stick of butter, unsalted (4 ounces)
- 1 teaspoon of vanilla
- 2 large eggs
Topping
- ½ cup of mini marshmallows
- ¼ cup of milk chocolate chips
- ¼ cup of dry roasted peanuts, chopped
Instructions
- Preheat the oven to 350°F and prepare an 8x8 square baking pan with parchment paper.
- In a medium saucepan, gently melt the chocolate chips (½ cup) with the butter on low/medium heat. Stir while it is melting. Set aside to cool.
- In a large mixing bowl whisk together your flour, salt, sugar, cocoa until evenly combined.
- In a small bowl whisk the eggs and vanilla.
- Pour all wet ingredients into the dry ingredients and stir to combine. Pour the batter into prepared baking dish and bake for 20 minutes or until the edges are firm, it will be normal for the center to seem a little underdone. You want this if your goal is fudgy.
- Remove the brownies and sprinkle evenly with the marshmallows, remaining chocolate chips, and chopped peanuts. Place back in the oven for an additional 3 minutes. Marshmallows will start to turn golden and melt but still hold shape when finished.
- Remove from oven and let cool in baking pan on cooling rack until cooled completely. Brownies will continue to bake and will be crumbly until you let cool.
Notes
- be sure to find the dry roasted peanuts that don't have any flavorings on them, just peanuts and salt as the ingredients.
