    Crave Worthy Chocolate Raspberry Overnight Oats

    Start your day off on the right foot by having breakfast prepped with these chocolate raspberry overnight oats.

    I am a huge fan of chocolate for breakfast.

    Well to be fair I am a huge fan of chocolate anytime of the day BUT, there is a method to my madness when it comes to chocolate for breakfast.

    And I am just saying, this tip may change your life forever.

    If you are someone who loves sweets AND you are also someone who likes to stick to a fairly healthy diet but find it hard to not eat sweets all day long, adding in a sweet chocolate breakfast works.

    It's like you start your day off with talking your brain off the ledge of "feed us chocolate or else" mentality.

    So if you would like to hop on the chocolate breakfast train with me, may I suggest these amazing chocolate raspberry oats? They will satisfy cravings, they will keep you full, and if you cut a cute little heart shaped raspberry on top, they will make you very happy.

    It is an all around win friends. Chia seed, chocolate, raspberry blissful breakfast win.

    What are overnight oats

    Overnight oats aka ONO, are exactly what it sounds like. Oats that you soak in your milk of choice overnight. When you wake up they are soft and ready to eat!

    So you forgo the heating up in a pan or microwave and just let them become edible by softening.

    Do I eat them cold

    While the entire concept of overnight oats is designed to be eaten cold. I am giving you permission for you to do you. Eat them cold, or heat them up. I do both depending on what kind of mood I am in.

    If you prefer to heat the over night oats up, just pop them in the microwave or heat on the stovetop the next morning.

    You won't actually be heating to cook them because as the overnight oats soak they become soft and ready for you to eat by morning time.

    Benefits of chia seeds

    Chia seeds are one of those foods that you can consider a superfood.

    Packed with nutrients high in protein and fiber, you won't find this kind of profile in any other seed.

    You can find 11g of fiber 4 g of protein and a high dose of magnesium and manganese in just one tablespoon of chia seeds.

    Chia seeds are full of antioxidants helping improve your health, GI tract and skin.

    Ingredients and substitutions

    To make these chocolatey oats you will need the following ingredients:

    • old fashion quick cooking oats (I used gluten free, we like these oats)
    • milk (dairy or non dairy)
    • unsweetened cocoa powder
    • chia seeds
    • maple syrup
    • salt
    • frozen raspberries
    • cacao nibs or mini chocolate chips

    Substitutions

    Oats- This won't work with instant or steel cut oats. One will be too mushy the other won't be soft. It is best to use an old fashion oat.

    Milk- I used coconut milk but you could use any milk you like.

    Maple syrup- I prefer the maple syrup but you could use honey.

    Frozen raspberries- I like frozen because they get a little juicier than fresh unless you can find some really awesome ones in season.

    Chia seeds- you won't be able to sub these for something else. Chia seeds turn into a gel when soaked. You could eliminate them if you wanted, but may need to play with the ratio of milk.

    Expert tips and how to store

    Here are a few tips that will make this recipe super easy:

    • I like to mix the ingredients in the same jar I am going to store them in. A wide pickle jar works really well.
    • You could make your jam the night before as well but wait to top the oats with it until you are ready to eat it.
    • If you like raspberries but not the seeds, you could warm the raspberries alone in the pan until juicy. Mash or even blend and then push thru a fine mesh sieve. Then return to pan with the other ingredients to heat up.

    How to store:

    Store these in the jar you make them in (in the fridge) until you are ready to eat. This makes one very large serving so you may want to divide into two after they have soaked all night to make for a grab and go type breakfast.

    As mentioned above, if you make the jam ahead of time store it separately and top before you eat.

    Description

    Start your day off on the right foot by having breakfast prepped with these chocolate raspberry overnight oats.


    Ingredients

    Scale
    • ½ cup of old fashioned oats (gluten free or regular)
    • 1 cup of milk (dairy or non dairy)
    • 1 tablespoon of unsweetened cocoa powder
    • 1 tablespoon of cacao nibs or mini chocolate chips (optional)
    • 1 tablespoon of chia seeds
    • 1 tablespoon of pure maple syrup

    Raspberry Jam Topping

    • ½ cup of frozen raspberries
    • 1 tablespoon of maple syrup
    • ½ tablespoon of chia seeds 

    Instructions

    1. In a large jar or bowl combine the ingredients for the overnight oats. Stir until well combined. Cover and place in the fridge overnight.
    2. In a medium sauce pan heat all ingredients for raspberry layer until juicy. Mash the raspberries with a meat mallet or back of a wooden spoon. 
    3. Top the overnight oats with the raspberry jam. Additional topping ideas- top with coconut cream, fresh raspberry and cacao nibs or chocolate chips.

    Notes

    • If you make the jam ahead of time, be sure to store separately and top the oats with the jam just before serving. 
    • You can eat your ONO warm or cold, it is up to you!
