    Chocolate Chip Cookie Bread {paleo}

    This incredible, super yummy paleo chocolate chip cookie bread will be your new breakfast, dessert, anytime snack bread. It tastes just like a paleo chocolate chip cookie with the perfect springy cake like texture. Gluten free/grain free and refined sugar free.

    This freaking bread you guys. It about did me in as a mom keeping her cool.

    You see, I recipe tested this bread when my older two children were with their dad. It came out amazing on the first try. Sooo, when they came back a few days later, I didn't want to share.

    My daughter would. not. shut. up. about this bread after I gave her a piece to try.

    So I made a second loaf before the first loaf was even gone so I could share. I can't really blame her. It is so, so, good you guys. But in all seriousness, you know when your kids won't leave you the eff alone about something? That was my daughter with this chocolate chip cookie paleo bread.

    And each time she saw me eating a piece she was like a seagull at the beach, diving and swooping trying to get more of it. I am not kidding, it almost made me loose it!

    She ate this every day for lunch. I ate it everyday for 2 weeks for breakfast, snack after lunch and snack before dinner. Ooopsy.

    that texture tho!

    Each time I ate it, I knew it tasted like my paleo chocolate chip cookies, but I couldn't nail down what the texture was like to me. Then it came to me. The texture is like when you go to a wedding and the wedding cake is this awesome firm, yet soft and springy, with a perfect crumb kind of texture.

    Yup, this chocolate chip cookie bread is like the perfect textured wedding cake. So much so, that I plan to turn this into a cake.

    How freaking amazeballs will that cake be?! To answer for you, it will be amazeballs. And you will love it. My birthday is in June. Let's set a date for the cake to be for then.

    Let's go over some chocolate chip cookie bread details.

    Ingredients for Paleo Chocolate Chip Cookie Bread

    • Almond flour- you need a finely ground almond flour, not almond meal for this recipe
    • tapioca flour
    • salt
    • baking soda
    • baking powder- no baking powder is not strict paleo. I used a gluten free, aluminium free blend. You can make your own if you are super strict
    • coconut sugar
    • eggs
    • ghee
    • non dairy milk ( I actually used this)
    • allergen free chocolate chips like Enjoy Life Brand

    Is this bread healthy?

    While we all have our own definition of healthy, this paleo sweet bread has some really awesome healthy characteristics.

    Almond flour is a nutrient flour that is high in fiber, protein and low in carbs. It offers a healthy dose of vitamin E, magnesium and manganese.

    This bread is refined sugar free, and is made with coconut sugar. Coconut sugar has a glycemic index of 35 whereas white table sugar has a GI of around 65.

    The eggs in the recipe add a big protein boost. There are 4 eggs in this recipe giving you an additional 28 grams of protein this the loaf!

    Substitutions

    Substituting paleo baked good ingredients is tough. And to be honest this recipe worked so amazinglingy perfect I didn't want to mess with the balance.

    So I am going to say that I wouldn't substitute a thing and expect similar results. Not to say you can't try them, it just may not come out with such a perfect texture and rise.

    If you try subbing any of the ingredients I would love to hear how they turn out.

    How to store

    This bread is best stored at room temperature in a sealed container up to 3 days. I stored this in the fridge as well to test how it did. I still liked the bread in the fridge. And it actually didn't get really soggy like a lot of paleo breads do in the fridge. However, I still preferred it at room temperature.

    Baking tips

    A few tips when baking this bread. I like to use parchment paper when I bake with paleo flours as it is the easiest way to keep it from sticking. To get your parchment paper to fit into the bread pan really well, crumble up the parchment paper into a ball. Then wet it just a tiny bit, and crumble some more. Un-crumble the paper and and it should be a lot more pliable. Shake off any excess water.

    I used a glass bread pan that was 8.5"x4"x2.5"

    Is this gluten free

    Because this recipe is paleo, it is gluten free and grain free. Be sure to read my note above on baking powder if you are strict on zero grains. Baking powder does contain cornstarch and you can make your own to make it compliant to your diet.

    Description

    Ingredients

    Scale
    • 2 ½ cups of finely ground almond flour
    • ½ cup tapioca flour
    • ½ cup coconut sugar
    • ¼ teaspoon salt
    • 1 teaspoon baking powder
    • ½ teaspoon baking soda
    • 4 large eggs
    • 1 teaspoon vanilla
    • ¼ cup ghee (warmed so it is a thick pourable liquid)
    • ¼ cup non dairy milk 
    • ½ cup Enjoy Life Chocolate Chips or similar brand

     


    Instructions

    1. Pre heat your oven to 350°F
    2. Prepare a bread loaf pan by lining it with parchment paper.
    3. In a large bowl combine all of your dry ingredients (almond flour, tapioca flour, salt, baking powder, baking soda, coconut sugar) and whisk so they are well combined.
    4. In a separate medium bowl combine all of your wet ingredients (eggs, ghee, vanilla, non dairy milk) and whisk for several minutes, until your ingredients are smooth and when the whisk is lifted above the batter, the liquid falls off the whisk in smooth connected line back into the bowl.
    5. Pour the well whisked wet ingredients into the dry ingredients and stir with large spoon until just combined. 
    6. Fold in your chocolate chips
    7. Use a wooden spoon to pour and evenly spread your batter into a bread pan. 
    8. Bake for about 55 minutes. Start checking your bread at the 50 minute mark. A toothpick inserted into the center should come out clean.
    9. Let bread cool in bread pan for 15 minutes before removing gently to a cooling rack. Cool the remainder of the way before slicing. If you did not use parchment paper let the bread cool in pan longer. 
    10. Store at room temperature in a sealed container for up to 3 days. 

     

    Notes

    1. I have not tested substituting any ingredients in this recipe because they all worked so well together. If you try a sub and it works be sure to check back in and let everyone know!
