This insanely delicious carrot banana smoothie will have you gladly drinking your veggies. It is simple, has no added sugars and works for vegan, paleo and Whole30 diets.
1- 5 inch carrot, chopped roughly, ends removed (peeling optional)
1 frozen banana, broken into 2-3 pieces
1 cup of coconut milk , plain and unsweetened (the kind from a carton)
1 pitted date (see note) you can use medjool or deglet noor
pinch of cinnamon
- Place all ingredients into blender. Blend on high until completely smooth.
- Enjoy right away, cold.
- If your date is not super soft, then you will want to soak it first. Place the date in a small bowl and had super hot water. Soak the date for about 5 minutes, discard the water.
- If you do not have a high powered blender it will be best to cut everything into small pieces before blending.
- If you do not want a super sweet smoothie you can omit the date.
