Carrot Banana Smoothie


Description

This insanely delicious carrot banana smoothie will have you gladly drinking your veggies. It is simple, has no added sugars and works for vegan, paleo and Whole30 diets.


Ingredients

1- 5 inch carrot, chopped roughly, ends removed (peeling optional)
1 frozen banana, broken into 2-3 pieces
1 cup of coconut milk , plain and unsweetened (the kind from a carton)
1 pitted date (see note) you can use medjool or deglet noor
pinch of cinnamon

Instructions

  1. Place all ingredients into blender. Blend on high until completely smooth. 
  2. Enjoy right away, cold. 

Notes

  • If your date is not super soft, then you will want to soak it first. Place the date in a small bowl and had super hot water. Soak the date for about 5 minutes, discard the water. 
  • If you do not have a high powered blender it will be best to cut everything into small pieces before blending. 
  • If you do not want a super sweet smoothie you can omit the date.
