    Blueberry Vinaigrette Dressing

    A fruity, sweet-tart blueberry vinaigrette dressing that is simple to make and only uses 4 ingredients.

    Oh blueberry dressing how I love thee. Let me count the ways you have become one of my favorite dressings to have on hand...

    1. You are sweet but not too sweet. And tangy but perfectly tangy.
    2. You make spinach salads look and taste scrumptious
    3. You pair perfectly with bacon...and more bacon on my salads is always a good thing.
    4. You are a beautiful fancy AF color. And bright colors not only make you pretty they make you nutritional.
    5. You are ready in a jiffy, and sooo uncomplicated.

    Are you with me yet? Have I convinced you that it's not a request to add this dressing to your life but a command? JK...kinda.

    Healthy but doesn't taste healthy

    You know how you can go to the store and buy a fruit flavored vinaigrette that tastes like dog crap when you get home and try it? Then you are stuck with a dressing that stays in your fridge for 2 years until you finally decide to throw it out?

    Well this healthy dressing isn't one of those. It tastes decadent. It is smooth and thick at the same time and nothing about it tastes like a "diet-y" vinaigrette dressing. Not that I am saying this dressing is a diet dressing.

    A) Diets are the dumbest thing in the world and if you still diet....email me stat lets chat. I need to help you.

    B) It just seems like every fruity dressing out there on the market is geared towards being low calorie or something. Not this one. Low calorie is as dumb as diets. It's 2020....no one, and I mean no one should be counting calories or "dieting".

    But this dressing is in fact healthy! It is made with ingredients that are so good for your body.

    Health benefits of blueberries

    Blueberries have a ton of antioxidants, they are actually one of the top antioxidant containing foods. The main antioxidant in blueberries is flavonoids.

    You should be trying to get as many antioxidants in your body as you do money in your bank account. They prevent cancer, slow aging, make you look amaze balls.

    Blueberries are high in fiber and nutrients. You can find a high amount of vitamin C, K and manganese in these blue gems. In fact 1 cup of blueberries gives you about 25% of your daily recommended value.

    Honey is also freaking amazing for you. I wrote about honey here...so check that out if you want to learn more about the benefits.

    Then there is the balsamic vinegar. A quick search on the google machine shows you balsamic vinegar has benefits for your digestion, skin and can improve weight loss.

    This blueberry dressing is more like a magic elixir if you ask me.

    Making this blueberry vinaigrette is really simple. It works best if you have a blender but I suspect if you put a little work into it, you could get away with using an immersion blender as well.

    Ingredients in blueberry vinaigrette dressing

    You need four ingredients to make this dressing if you don't include the pinch of salt.

    • Balsamic vinegar
    • Blueberries- fresh or frozen
    • Honey
    • Avocado oil
    • Pink Himalayan sea salt (or salt on hand)

    Step by step instructions

    • Simmer- Place your blueberries and honey in a small sauce pan. Turn the heat on medium high and bring it to a slow boil, then reduce the heat. Simmer until most of the blueberries have popped and are tender and juicy.
    • Add- Place your oil, vinegar, salt and cooked blueberry honey mixture in blender.
    • Blend- Blend all of your ingredients together until smooth and thick.
    • Store- Place the dressing in the fridge to cool down. I think it is best served cold. This dressing will last up to 5 days (or more) in a sealed glass container in the fridge.

    Substitutions

    Blueberries- you can use frozen or fresh blueberries. I like frozen blueberries as they tend to be sweeter.

    Honey- I suspect you could swap the honey for maple syrup. I haven't tried another sweetener...let me know if you do!

    Avocado oil- the only oil I would personally substitute the avocado oil for is a LIGHT tasting olive oil. If you decide to use something like extra virgin olive oil expect for it to change the flavor of the dressing.

    Pink Himalayan sea salt- this can be substituted with any fine grain salt you have on hand. However due to the amazing mineral profile of pink Himalayan sea salt I strongly encourage to make the switch over to this salt.

    Balsamic vinegar- I would not substitute this vinegar for this dressing recipe. You don't have to use a fancy balsamic dressing for this recipe. I used this*.

    Storing your blueberry dressing

    Due to the blueberries, this will not last as long as a dressing that doesn't contain fruit. You can store this in the fridge for 5 days. I like to save my old jars from dressings or pasta sauces and re-use those for homemade dressings. That way you are storing them in glass and they have a nice tight seal.

    Ingredients
