Suns out, grills out friends. It is almost freaking time for summer. The weather is warming which means it is time to fire up those grills.
I have for you today a super simple yet so delicious grilled chicken sandwich to make the next time you get a hankering for grilled chicken.
First of all, you can never go wrong with adding bacon to anything. Because well, duh, bacon. And everyone knows bacon and bleu cheese go together amazing. But you also need provolone. Yes not one, but two cheeses for this delicious grain free chicken.
But there is more friends.
We have to talk about the chicken. This chicken is brined and is so tender. But don't be scared. Brining is super easy (at least my way) and will take minutes of your hands on time.
Then there's the toppings.
It was fantastic topped with red onion and crisp chilled lettuce. But you could go crazy with the toppings. It would absolutely be fabulous with barbecue sauce on top.
How to brine chicken breast
Here's the deal Lucille. I'm not a brining expert. But I am an expert in turning anything into a half ass task and making it amazing. So that's how I brined this chicken. Half assed.
I didn't go hog wild with the flavors in the brine, I simply wanted the results of tender juicy chicken without a lot of fuss.
To brine these chicken breasts you are going to throw them in a gallon baggie or large container. Then pour 8 cups of cold water in the bag, and then add 2 tablespoons of kosher course salt. then throw in a bay leaf for flavor.
The chicken will brine for at least 2 hours. However, you could start your brine the night before. Just keep it in the fridge.
How does brining work
According to Food52, when you place your meat in a salty flavorful solution "the liquid will travel into the meat in order to equalize the salt levels. our meat is not only gaining liquid; it's also gaining salt, and the higher salt concentration will begin to break down its proteins".
The result? A tender meat, filled with juice and flavor, but not salty flavor. That is right! Don't be afraid that brining results in an overly salty piece of meat because it doesn't. In fact I actually added more salt to the seasoning after I brined.
Don't skip on brining the chicken. It will literally change your grilled chicken eating life.
Ingredients for bacon and bleu grilled chicken sandwich
This might look REALLY long. Don't be scared! It's just because we have lots of pieces to the puzzle, but it all comes together super easy.
For the brine:
- 8 cups of cold water
- 2 tablespoons of course kosher salt
- 1 bay leaf
For the Sandwich
- gluten free buns ( I used gluten free grain free Against the Grain Rolls)
- chicken breast
- bacon
- romaine lettuce
- red onion
- bleu cheese
- provolone cheese
Chicken Seasoning
- cumin
- black pepper
- garlic powder
- paprika
- oregano

Ingredients
Chicken
- 1.5-2 pounds of chicken breast cut into 4 total pieces and pounded to even thickness if desired
Brine
- 8 cups of cold water
- 2 tablespoons of course kosher salt
- 1 bay leaf
Dry Rub
- ½ teaspoon cumin
- ¼ teaspoon black pepper
- ¼ teaspoon garlic powder
- ¼ teaspoon paprika
Additional Toppings
- 8 tablespoons of crumbled bleu cheese
- 8 pieces of cooked bacon
- 4 pieces of romaine lettuce
- ½ red onion sliced
- 4 slices of provolone cheese
Instructions
Chicken
Prepare: Pound the chicken using a meat mallet until even thickness if desired. Be sure you have 4 pieces of chicken to make 4 sandwiches.
Brine: Combine ingredients for the brine in a gallon bag or large enough container to hold it. Shake or stir to dissolve salt. Add chicken breasts. Brine chicken for at least 2 hours. Remove chicken from brine and pat dry.
Rub: Sprinkle the dry chicken rub evenly over front and back of chicken breasts and rub in.
Grill the chicken on medium-high heat until cooked through at an internal temperature of 160 degrees Fahrenheit. I cooked mine about 7 minutes each side. About 1 minute prior to the chicken being done, place one slice of provolone on each chicken breast. Close the lid and let the cheese melt over the chicken breast.
Assemble: Build your grilled chicken sandwich! Top each grilled chicken sandwich with two pieces of bacon, 2 tablespoons of bleu cheese, 1 slice of lettuce, and red onion to taste. If desired add your favorite condiment like mayo or barbecue sauce.
Notes
- Don't skip the brining. It is super easy and can even be started the night before. It will make a super juicy chicken breast.
- I prefer to pound the chicken between two pieces of saran wrap. I like chicken breast thin. It is easier to eat, cook and goes further in a meal.
