Ever since getting an air fryer, I've been in love with using them to make my Flavorful Air Fryer Diced Potatoes. They're perfect for pairing with just about any meal, but I wanted to make another option, specifically for breakfast.
The inclusion of bacon in these country potatoes really boosts the flavor and makes them extra delicious and satisfying.

Ingredient Notes
- red potatoes - Red potatoes are my favorite potatoes to use because they have the best flavor and do really well in the air fryer. If needed, you can also use Yukon gold or russet potatoes.
- bacon - If you are looking to keep these potatoes Whole 30 compliant, make sure to use an uncured bacon that does not have any non-compliant additives like sugar, sulfites, MSG, or carrageenan. I like and recommend the sugar free version of Aldi's "Never Any" bacon. Check out my Whole30 Aldi Shopping List for all of my favorite brands and recommendations!
- chives - I recommend using freeze fried chives because they are easy and don't require any additional chopping, but you can use fresh chives if you have them on hand.
- spices - The flavor of these homestyle breakfast potatoes are very neutral with a combination of paprika, salt, garlic powder and onion powder. Feel free to use whatever spices sound best to you.
- avocado oil - Avocado oil is great to use when air frying because it is neutral in flavor and has a high smoke point to prevent burning. If necessary, you can use a light tasting olive oil or another neutral oil. Avoid using extra virgin olive oil or unrefined coconut oil as the flavor will be overpowering and extra virgin olive oil is not great for the air fryer.
Step by Step Instructions
- Dice the potatoes and bacon. You'll need either 1 larger potato or two small potatoes and two slices of uncooked bacon. No need to peel the potatoes - just gently scrub them clean, then dice them into about ½" cubes. Dice the uncooked bacon into similarly sized cubes.
- Coat the potatoes and bacon with spices. In a medium-sized mixing bowl, mix together the breakfast potatoes, uncooked bacon, chives, paprika, salt, garlic powder, onion powder, and avocado oil until evenly coated.
- Air Fry for 12 minutes. Transfer the breakfast potatoes with bacon to the air fryer basket and air fry at 400 degrees, shaking halfway through. You'll know the potatoes are ready when they're crispy on the outside, soft on the inside and easily pierced with a fork.
- Taste test. Carefully remove the breakfast potatoes and taste. Add more salt, if desired, then serve while hot.
Frequently Asked Questions
Can I use frozen diced potatoes in the air fryer?
I haven't tested these breakfast potatoes with frozen potatoes, but I'm sure it would work great! I would recommend following the cook times in my Crispy Air Fryer Frozen Tater Tots if you want to try it. You might also enjoy my Air Fryer Frozen Corn Dogs and Air Fryer Frozen Chicken Nuggets too.
How do I prevent my potatoes from sticking to the air fryer basket?
Make sure to use the full 2 tablespoons of avocado oil to coat the potatoes - this is what is going to prevent it from sticking to the basket.
Why aren't my potatoes cooked all the way through?
If your potatoes aren't cooked all the way through after 14 minutes, continue cooking them until they are easily pierced with a fork. All air fryers are not made equal, so yours may just need a little extra time. Additionally, if you did not dice your potatoes small enough, they will obviously need a longer cook time.
Expert Tips
- Cut the potatoes uniformly. No matter which potatoes you choose to use, it's important to cut them uniformly in order to make sure they cook through evenly. I also recommend dicing them as opposed to chopping them into larger chunks. Larger cuts are going to require a longer fry time and have not been tested.
- Don't overcrowd the basket - If you are doubling or tripling these potatoes and pile them in the basket, they will not get crispy because there won't be enough room for the air to circulate. Keep them in a single layer and work in batches if needed.
- Don't skip the oil- Potatoes without enough oil look really sad by the time they're finished air frying. They also don't taste as good as they can. Be sure to use enough oil to coat the potatoes.
- If your air fryer needs time to preheat, make sure to do so. My model does not need to preheat, but if yours does, make sure to do so first before starting the 14 minute cook time.

Ingredients
- 1 heaping cup of diced red potatoes- ½" diced - this is about one large potato or two small
- 2 slices of uncooked bacon, diced
- 1 teaspoon of dried chives
- ½ teaspoon paprika
- ¼ teaspoon salt
- ¼ teaspoon of garlic powder
- ⅛ teaspoon onion powder
- 2 tablespoons of avocado oil
Instructions
- Add all ingredients to a medium bowl and stir to coat evenly.
- Spread potatoes into air fryer in an even layer.
- Air fry at 400° F for 12 minutes, shaking at the 6-minute mark. See notes.
- Potatoes will be golden brown, crispy on the outside, and soft on the inside when ready! Easily pierced with a fork.
- Carefully remove potatoes from air fryer, taste test and add more salt to taste if desired.
Notes
- No need to preheat your air fryer for this recipe unless recommended for your model
- This is Whole30 compliant if you use compliant bacon.
- You can sub in russet or gold potatoes, but I love red the best for flavor and how well they do in the air-fryer.
- If you dice your potatoes larger, you may need to adjust the cooking time. You can also easily double this recipe just working in two batches so you have a single layer of potatoes each time.
- If you are not using avocado oil you can use light tasting olive oil (not extra virgin)
- This is a smaller serving so you don't have to work in batches. But it will double or triple easily. Just work in batches so that you are not overcrowding your air fryer and everything can get crispy.
