Irresistible Mediterranean flavors combined with zesty red wine vinegar creating an effortless classic Paleo 3 minute Greek dressing.

Oh hey there you. Do you have three minutes to spare? Ok cool, because today we are making homemade Greek dressing in those spare minutes.
Zippy, zesty, herby, oh so flavorful Greek dressing with just a hint of sweetness to balance it out.
This dressing is perfect to make so you can stay away from additives and preservatives found in bottled dressings. Because even if you find a clean dressing, some kind of preservative is keeping it fresh.
Let's not forget to mention this Greek dressing is Paleo friendly and gluten free. Being in control of ingredients you use is an awesome thing.
And since this dressing only takes a few spare minutes there is no reason not to whip this up. You don't even need special equipment. All you need is a jar with a lid and you're on your way to Greek dressing heaven.
A few ways to use 3-minute Greek dressing
- A classic Greek salad full of fresh cucumber, salty olives and briny feta
- Mediterranean power bowls (recipe coming Friday)
- Greek pico de Gallo (check back Wednesday)
- As a flavorful chicken marinade
Why I love this dressing
It's not like you don't have your fair share of Greek dressing recipes to try out there on the internet. But there are a few things that make this dressing different than other Greek dressings.
The list of ingredients may seem long but we are using all dried spices so it still comes together faster than having to chop fresh ingredients.
This dressing has basil. You usually only see oregano in most recipes, but I'm telling you it makes a big difference and you must try it. The other unlikely ingredient is onion powder. I think it adds a new depth of flavor that reminds me of the Greek dressings I've loved from restaurants in the past.
Let's not forget the amount of sweetness the honey adds is perfect. Like lick the plate clean, perfect.
Ingredients
- Avocado oil- I prefer an oil that doesn't have flavor I taste when I make dressings. If you substitute this I recommend a light tasting olive oil versus extra virgin olive oil which has a very strong flavor.
- Red Wine Vinegar- Nothing super fancy or expensive.
- Dried spices- oregano, basil, garlic powder, onion powder, salt, pepper
- Honey
- Dijon mustard
I think it's time we make some dressing. Don't forget to stop by this week for two more Mediterranean flavored dishes you won't want to miss!

3 Minute Paleo Greek Dressing
- Total Time: 3 minutes
- Yield: 6 1x
Description
A perfectly balanced zesty, herby Greek dressing with a hint of sweetness. Paleo friendly and gluten free.
Ingredients
- ⅓ cup red wine vinegar
- ½ cup avocado oil
- 2 teaspoons Dijon mustard
- 1 teaspoon honey
- ½ teaspoon garlic powder
- ½ teaspoon dried oregano
- ½ teaspoon dried basil
- ¼ teaspoon onion powder
- ½ teaspoon salt ( I used Himalayan)
- ¼ teaspoon black pepper
Instructions
- In no particular order add all of your ingredients into a glass jar with a tight fitting lid.
- Shake the jar vigorously to combine. Shake until your oil and vinegar are no longer separated and are completely emulsified.
- This dressing is ready to use upon making but tastes the most flavorful if you let the flavors meld together in the refrigerator at least 30 minutes, or as long as you can, after making.
- Store leftovers in the refrigerator. If you use avocado oil it shouldn't need to come to room temperature before using again. However sometimes olive oil thickens once in the refrigerator. If this happens just set on the counter and let it come to room temperature before giving it a good shake.
- Shake before serving. Enjoy!
Notes
- I prefer a mild tasting oil. If you substitute the avocado oil try using a light tasting olive oil. If you use extra virgin olive oil it will have a strong taste.
